Hanger steak, also known as hanging tender or butcher's steak, hangs between the rib & loin supporting the diaphragm. It is often called “butcher's steak” because they liked to keep it for themselves. Hanger steak is a great choice for marinating & slicing thin. It's very similar to flank steak & also needs to be cooked to medium rare temperature to avoid it getting tough. When cooked properly, it is super tender & one of our favorite steaks!
This is a great choice for steak tacos or steak fajitas OR just a great all around grilling steak!
